If you prefer to call chips ‘fries’ and enjoy swaying to the sound of Elvis Presley over dinner, a new restaurant set to open could take your fancy.

That is as a chain styled on American diners of the 1950s is set to open a branch in The Mall Luton, the Herald & Post can reveal.

Ed’s Easy Diner will open in the unit between Monsoon and Fone Giant after a change of use planning application was accepted by Luton Borough Council officers last week.

The first of the company’s diners opened in London’s Soho in 1987 and in the last six years the firm has gone from three outlets to more than two dozen.

It is not yet known when the Luton restaurant will open, but hoardings have already appeared outside the unit.

A statement included in the planning application read: “Given the location of the unit within an established shopping centre, which already includes complimentary restaurant uses as standard, it is expected that the change of use will enhance the vitality of the centre and therefore the defined premier shopping frontage.”
